Arabic Chicken Rice

Kabsa /Arabic chicken Rice is the middle eastern main course dish ,a tomato based rice cooked in chicken broth with specific Arabic Garam masala (baharat) .. Each place has different name for this dish but basic is cooking the rice in chicken stock and the chicken is grilled to the perfection…

It has different names in different places in saudi we call it as kabsa … it’s usually served with a tomato crush /kabsa tomato sauce I donno the exact name best combination to have with this rice.. This kabsa can also be prepared in mutton. The main key ingredient is the dried lemon that gives a twist to the rice .

Actually this recipe I got from a FB group community JorenQ as I have mentioned about them in many of my previous post.A group with food lovers and havev many fun filled activities … one such activity is cook along where one of the member is selected and they teach us one of their favourite dish with all tips and tricks… One such recipe that learned from that cook along by shahina Afsal who blogs at Shabosphere is this kabsa rice..This was prepared on occasion of UAE national day in that group so you check out this link to see other recipes related to this she prepared on that day .. I have tried these many times in my home and its hit in my home so  thought that will share with my viewers too…

Instructions

To prepare Arabic Masala
  1. Dry roast all the ingredients listed for masala except paprika and nutmeg powder
  2. Then grind it to powder with paprika and nutmeg powder... store in container.
To prepare Kabsa/rice
  1. In a pan add oil and splutter the whole spices except dry lemon.
  2. Add in onion and cook till soft then add ginger garlic paste and saute until raw smell goes.
  3. Add in spice powder,tomato paste and tomato puree and saute it well ..
  4. Then add in the chicken pieces, crushed chicken cubes and dry lemon give it a quick mix add water and cook the chicken.
  5. Once the chicken is cooked remove the chicken pieces and to the chicken broth add required water if needed for rice then add washed and soaked rice to it and cook till rice is done
  6. Rub the Arabic Masala mixed with oil to the chicken pieces and grill /roast until browned
  7. Once the rice is done keep the grilled chicken pieces on top it... in a small bowl keep the burning charcoal and add the ghee/oil to it and close with lid to prevent smoke escaping... keep it closed for 5 minutes..
  8. serve hot
