Nutty Dates Roll

These rolls have crunchy pastry covering with a sweet dates and nuts filling inside…This is perfect munching treat for those who loves dates and nuts…dates and nuts have a great combination that goes well together…..I have eaten the dates roll with the nuts but when its filled inside a pastry roll it enhances its taste…

Here i have used only cashew , pistachio and almonds .. as these three go well with dates…you can add any other dry fruits to your taste….. dry fruits /nuts selected should be of good quality …you can find wide range of these nuts in online store place of origin . This place is the availability of all “dry fruits” in one place…

Ingredients

Filling
250 gm dates
100 gm dry fruits/nuts
1/2 tsp cardomom powder
pastry covering
2 cups All purpose flour
70 gm sugar
1 1/4 tsps baking powder
1/4 tsp baking soda
pinch of salt
113 gm cold butter
2/3 – 3/4 cup buttermilk(adjust accordingly)
1 tsp vanilla essence

Steps

  1. Chop the dates and mince it and crush the nuts do not powder it as we need to get the bites of it ..blend together both dates and nuts add the cardomom powder to it ..keep
  2. pre heat the oven to 200°c .keep the rack in the middle of the oven .line the baking tray with parchment paper.
  3. In a large bowl mix together all purpose flour , sugar , baking powder and soda , salt.
  4. cut the cold butter into small pieces and blend with flour mixture.the mixture should look like crumbs.
  5. mix together butter milk and vanilla essence and add to the above kix and form a dough..
  6. roll the dough into square pieces and cut horizontal and vertically to form small squares.
  7. Take the dates mixture and roll it and stuff in the pastry square and seal the sides keeping the above and below sides open ….
  8. prepare remaining in the same way..brushit with milk and bake @200°c for 15 mins….
  9. crunchy dates roll ready to be served…
