Mutton Biriyani – {Tamilnadu style}

A delicious ,flavourful and rich  one pot mutton biriyani in tamilnadu style.

Its biriyani challenge in muslim food bloggers group for this month. There are variety of biriyani  across the world. If you peek into any cuisines in the world they have their own biriyani in their own traditional  ways.. when I saw the challenge as biriyani I started to browse various variety of biriyani across world that i have not yet tasted but then I thought it would be better if I share biriyani that we prepare in our areas that may be new version for others.. As am from borders of tamil nadu and Kerala I have experienced  both of their biriyani’s . Kerala style biriyani is layered biriyani in which rice and gravy is prepared separately and then layered whereas in Tamilnadu style both rice and gravy/masala is mixed together  and cook that adds more taste to the biriyani..I have already posted many variety  of biriyani in my blog. check out here

This biriyani is very simple yet very flavourful that flavour of the biriyani  comes from the onion tomato gravy and biriyani masala used .. If you really wants the good biriyani then never compromise with the base masala..If you reduce the masala then the biriyani would become dry.. Now let’s get into the recipe.

Ingredients

Biriyani Masala powder

Instructions

To Prepare Biriyani Masala powder
  1. Dry roast ingredients under biriyani masala then powder and keep aside...you can keep this in air tight container for further use .In this recipe we only use 2tbsp of it.
To prepare Biriyani
  1. In a pressure cooker add 2 tbsp oil ,1 onion chopped saute till they are wet then add 1 tbsp ginger and garlic paste each ,half tomato chopped ,1 tsp redchilli powder saute it then add washed mutton and cook until 90%done.strain the mutton and keep aside
  2. Ib another large pan add remaining oil and ghee , add remaining onion cook till they are soft then add greenchilli and ginger garlic paste saute till raw smell is gone then add the 2 tbsp of powdered Biriyani Masala ,redchilli powder, turmeric powder, tomatoes and cook till they are mushy and oil is seperated.
  3. Then add yoghurt ,lemon juice ,coriander leaves ,pudina ,salt and saute for a while then add the required (measured) mutton stock and water. Allow it to boil then add soaked rice ,cooked mutton pieces close the lid and cook until done stirring in between.
  4. In last 5 minutes when all water is absorbed put them in dum...
