Cauliflower fried Rice

Cauliflower fried Rice is a low carb , gluten free and a good substitute to the rice…It’s a stir fried rice type with a chicken and veggies.

 Cauliflower is grated into a rice like  bits and it resembles couscous and its a healthy twist on taking fried rice…Its light and fluffy and can be made quickly in minutes if you have everything ready…. nowadays my hubby has gone low carb diets and he don’t take any gluten stuffs and totally avoided  rice and rice varieties… but he was a rice lover so in order to replace his rice love in his diet  I found out this recipe would help him… ya it absolutely  done it… it’s very light and you won’t feel the heaviness  that you have on having rice…and it would be a perfect for a dinners now am also fallen in love with cauliflower  rice…. I have never thought that this vegetable can create such a magic..

Cauliflower is usually ground in food processor and the liquid in it is removed by placing them in a muslin cloth and twisting it that removes any water content in it even it can also be sauted in butter or oil to remove water content and remove raw smell of it before actual cooking..

You can also add other veggies like capsicum  ,broccoli then beef ,mushroom etc

Cauliflower fried Rice

Instructions

  1. Remove all leaves and cut the cauliflower into small florets.
  2. Place the florets in a food processor and blend until they are a rice-like texture. Be careful not to over process or it may turn mushy.Set aside, and drain excess moisture with a towel, if desired.
  3. In a pan add oil, chopped garlic then add and saute the chicken with salt and pepper..then add the carrots,spinach leaves cook it till they are crunchy..
  4. Then add the soy sauce, redchilli paste saute it well .
  5. Stir until most of the liquid has reduced, then add the cauliflower rice. Cook for about 3-4 minutes until the vegetables and chicken are incorporated evenly into the cauliflower.
  6. Spread the rice towards the edge of the pan, Pour the beaten eggs into the well, stir the eggs until they are cooked.
  7. Fold the eggs into the rice, then mix in the sesame seeds.and finally garnish with spring onion greens Serve!
